Step-by-step- Cook Chow Mein noodles according to package directions until al dente. Drain well, rinse with cold water, and toss with 1 tbsp sesame oil to prevent sticking. Set aside.
- In a small bowl, whisk together low-sodium soy sauce, dark soy sauce, vegetarian mushroom sauce, sugar, white pepper, cornstarch, and vegetable broth to create the sauce. Set aside.
- Heat the remaining 1 tbsp sesame oil in a large wok or skillet over medium-high heat. Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.
- Add julienned carrot, shredded cabbage, sliced red bell pepper, snap peas, and sliced mushrooms. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Add the cooked noodles and the white parts of the green onions to the wok. Pour the prepared sauce over the noodles and vegetables. Toss everything together vigorously for 2-3 minutes until the noodles are evenly coated and the sauce has thickened.
- Stir in the green parts of the sliced green onions. Serve immediately, garnished with toasted sesame seeds if desired.
