Step-by-step- In a large pot or Dutch oven, melt butter or heat olive oil over medium heat. Add chopped onion and celery, cooking until softened, about 5-7 minutes.
- Stir in minced garlic, dried thyme, and smoked paprika. Cook for another minute until fragrant.
- Pour in the vegetable broth and add the diced potatoes. Bring to a boil, then reduce heat to a simmer. Cook for 10-12 minutes, or until potatoes are tender.
- Add the corn kernels, milk, and heavy cream (if using) to the pot. Simmer for 5-7 minutes, allowing the flavors to meld and the chowder to heat through.
- Using an immersion blender, carefully blend about 1/3 of the chowder directly in the pot until slightly thickened, or carefully transfer a portion to a regular blender and blend until smooth, then return to the pot. This creates a creamier texture while leaving plenty of chunks.
- Season the chowder generously with salt and pepper to taste. Ladle into bowls and garnish with fresh chives or parsley before serving.

Storage & Freezer Guide
Make it last Refrigerator 3-4 days
Store cooled chowder in an airtight container. The consistency might thicken slightly upon chilling.
Freezer Up to 3 months
Allow chowder to cool completely. Transfer to freezer-safe containers or bags, leaving some headspace. Thaw overnight in the refrigerator before reheating.
Reheat Stovetop/Microwave
Gently reheat on the stovetop over medium-low heat, stirring occasionally, until hot. For microwave, heat in 1-minute intervals, stirring in between, until warmed through. Add a splash of broth or milk if it’s too thick.
Chef’s Corner
- For an extra layer of flavor, roast some of the corn kernels before adding them to the chowder. This adds a lovely smoky sweetness.
- Don’t over-blend! A chunky chowder is part of its charm. Blending just a portion helps create creaminess without losing texture.
- Feel free to customize with other vegetables like diced bell peppers or a pinch of cayenne for a subtle kick.
