Step-by-step- In a large bowl, whisk together the all-purpose flour, instant yeast, sugar, and salt.
- Gradually add the warm water and olive oil to the dry ingredients, mixing with a spoon or your hands until a shaggy dough forms.
- Transfer the dough to a lightly floured surface and knead for 8-10 minutes, until smooth and elastic. If using a stand mixer, knead with a dough hook for 6-8 minutes.
- Lightly grease a clean bowl with olive oil, place the dough in it, and turn to coat. Cover the bowl with plastic wrap or a damp cloth and let it rise in a warm place for 1-2 hours, or until doubled in size.
- Once risen, gently punch down the dough to release the air. Divide it into two equal portions and shape each into a ball. Your dough is now ready to be rolled out and topped for your pizzas.

Place the dough in an airtight container or a well-oiled, covered bowl. It will continue to slowly ferment, developing more flavor. Bring to room temperature for 30-60 minutes before using.
Freezer Up to 3 months
After the first rise, punch down the dough, shape it into balls, and lightly oil each. Wrap tightly in plastic wrap, then place in a freezer-safe bag. Thaw overnight in the refrigerator, then bring to room temperature before using.

If you’ve pre-baked crusts, store them airtight at room temperature for 2-3 days or freeze for up to 1 month. Reheat in a hot oven (400°F/200°C) for 5-7 minutes until crisp.

- For a more authentic Indian flatbread texture, you can substitute up to half of the all-purpose flour with whole wheat flour (atta).
- Don’t rush the rising process; a slow, steady rise yields a more flavorful and airy crust.
- If your kitchen is cold, create a warm spot for rising by placing the covered bowl in a slightly warm (not hot) oven that’s been turned off, or near a sunny window.
- For a subtle Indian flavor, consider adding a pinch of carom seeds (ajwain) or kalonji (nigella seeds) to the dry ingredients.
