  1. Cook the Hakka noodles according to package instructions until al dente. Drain, rinse with cold water to prevent sticking, and toss with 1 tsp sesame oil. Set aside.
  2. Heat the remaining 1 tbsp sesame oil in a large wok or skillet over high heat. Add sliced onions and stir-fry for 1-2 minutes until slightly softened.
  3. Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.
  4. Add shredded cabbage, julienned carrots, and bell peppers. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
  5. Push vegetables to one side of the wok. In the empty space, add soy sauce, chili sauce (if using), rice vinegar, sugar, and black pepper. Let it bubble for 15 seconds, then toss to combine with the vegetables.
  6. Add the cooked noodles and the white parts of the green onions to the wok. Using tongs, toss everything together vigorously until the noodles are well coated with the sauce and vegetables.
  7. Taste and adjust seasoning with salt if needed. Stir in the green parts of the green onions just before serving.
  8. Serve hot as a complete meal or a side dish.
