Green Peas and Potato Masala
A comforting and flavorful Indian curry featuring tender potatoes and sweet green peas in a rich tomato-onion gravy.

Step-by-step- Heat oil or ghee in a heavy-bottomed pan or pot over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown, about 7-10 minutes.
- Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
- Add the pureed or chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook, stirring occasionally, until the oil separates from the masala, about 5-7 minutes.
- Add the diced potatoes and green peas to the pan. Mix well to coat them with the masala.
- Pour in the hot water, add salt to taste, and bring the mixture to a simmer. Cover the pan and cook for 15-20 minutes, or until the potatoes are tender, stirring occasionally.
- Stir in the garam masala and cook for another 2-3 minutes, allowing the flavors to meld.
- Garnish with fresh chopped coriander leaves and serve hot with roti, naan, or rice.

Freezer Up to 2 months
Transfer cooled Aloo Matar to freezer-safe containers or heavy-duty freezer bags. Thaw overnight in the refrigerator before reheating.
Reheat Stovetop/Microwave
Reheat on the stovetop over medium-low heat, adding a splash of water if needed, until heated through. Alternatively, microwave in short bursts, stirring in between, until piping hot.

- For a richer gravy, add 2 tablespoons of whisked plain yogurt or a tablespoon of cashew paste along with the tomatoes. Cook on low heat to prevent curdling.
- Adjust the consistency of the gravy by adding more or less water according to your preference. Some prefer a thicker, drier masala, while others enjoy a more saucy curry.
- Using fresh green peas when in season enhances the flavor significantly, but good quality frozen peas work perfectly well too.
