  1. If using unroasted vermicelli, dry roast it in a pan over medium heat until light golden brown. Set aside.
  2. Heat oil in a large pan or kadai over medium heat. Add mustard seeds and let them splutter.
  3. Add urad dal, chana dal, and asafoetida. Sauté until the dals turn light golden brown.
  4. Add curry leaves, chopped onion, green chilies, and ginger. Sauté until the onion becomes translucent.
  5. Add the mixed vegetables, turmeric powder, red chili powder (if using), and garam masala. Sauté for 2-3 minutes.
  6. Pour in 2 cups of hot water and add salt to taste. Bring the mixture to a rolling boil.
  7. Once boiling, reduce the heat to low, add the roasted vermicelli, and stir gently to combine. Ensure the vermicelli is submerged.
  8. Cover the pan and cook for 5-7 minutes, or until the water is absorbed and the vermicelli is tender. Do not overcook.
  9. Turn off the heat and let it rest, covered, for another 5 minutes to allow the flavors to meld.
  10. Fluff the Masala Seeyam gently with a fork. Garnish with fresh coriander leaves and a squeeze of lemon juice before serving.
