Step-by-step- Preheat your oven to 350°F (175°C). Lightly grease and flour an 8×8 inch square baking pan or a 9-inch round cake pan.
- Prepare the streusel topping: In a small bowl, combine ½ cup flour, brown sugar, and cinnamon. Pour in the melted butter and mix with a fork until a crumbly mixture forms. Set aside.
- In a medium bowl, whisk together 1 ½ cups flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy. Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix on low speed until just combined, being careful not to overmix.
- Pour the cake batter into the prepared baking pan and spread evenly. Sprinkle the prepared streusel topping evenly over the batter.
- Bake for 30-35 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean.
- Allow the coffee cake to cool in the pan on a wire rack for at least 15 minutes before slicing and serving.
