Step-by-step- Marinate the chicken: In a bowl, combine chicken pieces with plain yogurt, 1 tablespoon ginger-garlic paste, half of the chopped green chilies, and salt. Mix well and let it marinate for at least 15-20 minutes, or longer in the refrigerator for best results.
- Sauté aromatics: Heat oil or ghee in a large pan or kadai over medium heat. Add cumin seeds, green cardamoms, and cinnamon stick. Sauté until fragrant, about 30 seconds.
- Cook onion: Add the finely chopped onion and sauté until golden brown, about 8-10 minutes, stirring occasionally.
- Add ginger-garlic and chilies: Stir in the remaining 1 tablespoon ginger-garlic paste and the rest of the chopped green chilies. Sauté for 1-2 minutes until the raw smell disappears.
- Toast spices: Reduce heat to low, add turmeric powder and coriander powder. Sauté for 30 seconds, adding a splash of water if the spices start to stick.
- Add chicken: Add the marinated chicken to the pan. Increase heat to medium-high and sear the chicken for 5-7 minutes, stirring occasionally, until it changes color.
- Simmer: Cover the pan, reduce heat to low, and let the chicken cook in its own juices for 15-20 minutes, or until tender, stirring occasionally. If the gravy becomes too thick, add a little water.
- Finish: Stir in the garam masala and half of the fresh chopped cilantro. Cook for another 2 minutes.
- Garnish and serve: Remove from heat. Garnish with the remaining fresh cilantro and a squeeze of fresh lemon juice. Serve hot with naan, roti, or steamed basmati rice.
