  1. Prepare the chicken lollipops by pushing the meat down to one end of the bone, creating a ‘lollipop’ shape. You can ask your butcher to do this.
  2. In a large bowl, combine the chicken lollipops with ginger-garlic paste, red chili powder, turmeric powder, garam masala, soy sauce, red chili sauce, and salt. Mix well and let it marinate for at least 30 minutes in the refrigerator (preferably 2-3 hours or overnight).
  3. In another bowl, whisk the egg. In a separate plate, combine all-purpose flour and cornstarch.
  4. Dip each marinated chicken lollipop first into the beaten egg, ensuring it’s fully coated. Then, dredge it thoroughly in the flour-cornstarch mixture, pressing gently to ensure a good coating.
  5. Heat oil in a deep pan or wok over medium-high heat. Once the oil is hot enough (a drop of batter should sizzle immediately), carefully place the coated chicken lollipops in the oil, without overcrowding the pan.
  6. Fry the chicken lollipops for 8-10 minutes, turning occasionally, until they are golden brown and cooked through. Ensure the internal temperature reaches 165°F (74°C).
  7. Remove the fried lollipops with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  8. Garnish with chopped spring onions and sesame seeds, and serve hot with your favorite dipping sauce like Schezwan sauce or chili garlic sauce.
