Step-by-step- Marinate the chicken: In a bowl, combine chicken pieces with 1 tbsp ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, salt, and yogurt (if using). Mix well and let it marinate for at least 20 minutes, or up to 2 hours in the refrigerator.
- Heat oil or ghee in a large pan or Dutch oven over medium heat. Add chopped onions and sauté until golden brown, about 8-10 minutes.
- Add the remaining 2 tbsp ginger-garlic paste and green chilies. Sauté for 1-2 minutes until fragrant.
- Stir in the tomato puree/chopped tomatoes. Cook, stirring occasionally, until the oil separates from the masala, about 5-7 minutes.
- Add the marinated chicken to the pan. Increase heat to medium-high and sear the chicken for 5-7 minutes, stirring frequently, until it changes color.
- Pour in 1/2 cup water or chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until chicken is tender and cooked through.
- Uncover, stir in garam masala and kasuri methi (if using). Cook for another 2-3 minutes to thicken the gravy to your desired consistency.
- Garnish with fresh cilantro and serve hot with rice, naan, or roti.

Chef’s Corner
- For best flavor, marinate the chicken for at least 30 minutes, or even overnight.
- Don’t rush the onion browning step; deeply caramelized onions contribute significantly to the gravy’s color and depth of flavor.
- Adjust the amount of green chilies and red chili powder to suit your preferred spice level.
