Method

Step-by-step
  1. Marinate chicken with yogurt, 1 tbsp ginger-garlic paste, 1/2 tsp red chili powder, 1/4 tsp turmeric, 1/2 tsp garam masala, and salt. Let it rest for at least 30 minutes, or preferably 2-3 hours in the refrigerator.
  2. Heat ghee or oil in a heavy-bottomed pan. Add chopped onions and sauté until golden brown, then remove from the pan and blend into a smooth paste with a little water.
  3. In the same pan, add the marinated chicken and sear on high heat for 5-7 minutes until lightly browned on all sides. Remove the chicken and set aside.
  4. Add the remaining 1 tbsp ginger-garlic paste to the pan and sauté for 1 minute until fragrant. Add tomato puree, remaining red chili powder, turmeric powder, and salt. Cook until the oil separates, about 8-10 minutes.
  5. Stir in the onion paste and cook for another 5 minutes, ensuring the mixture is well combined and fragrant.
  6. Add the seared chicken back to the pan along with the cashew paste. Mix well and add about 1/2 cup of water. Bring to a simmer, cover, and cook on low heat for 15-20 minutes, or until the chicken is tender and cooked through.
  7. Stir in the fresh cream, remaining 1/2 tsp garam masala, and crushed kasuri methi. Add green chilies if using. Cook for another 2-3 minutes without covering.
  8. Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.

Storage & Freezer Guide

Make it last
Refrigerator 3-4 days

Store leftover Chicken Changezi in an airtight container in the refrigerator. Ensure it cools completely before storing.

Freezer Up to 2 months

Transfer cooled curry to a freezer-safe container or bag. Thaw overnight in the refrigerator before reheating.

Reheat Stovetop/Microwave

Reheat gently on the stovetop over low heat, adding a splash of water or milk if needed to restore consistency. Alternatively, microwave in short intervals until heated through.

Chef’s Corner

  • For an extra rich flavor, you can smoke the finished curry with a piece of charcoal (dhungar method) before serving.
  • Don’t skip the marination time; it’s crucial for tender and flavorful chicken. Overnight marination yields the best results.
  • Adjust the spice level by increasing or decreasing red chili powder and green chilies according to your preference.
