Chicken Changezi

Step-by-step- Marinate chicken with yogurt, 1 tbsp ginger-garlic paste, 1/2 tsp red chili powder, 1/4 tsp turmeric, 1/2 tsp garam masala, and salt. Let it rest for at least 30 minutes, or preferably 2-3 hours in the refrigerator.
- Heat ghee or oil in a heavy-bottomed pan. Add chopped onions and sauté until golden brown, then remove from the pan and blend into a smooth paste with a little water.
- In the same pan, add the marinated chicken and sear on high heat for 5-7 minutes until lightly browned on all sides. Remove the chicken and set aside.
- Add the remaining 1 tbsp ginger-garlic paste to the pan and sauté for 1 minute until fragrant. Add tomato puree, remaining red chili powder, turmeric powder, and salt. Cook until the oil separates, about 8-10 minutes.
- Stir in the onion paste and cook for another 5 minutes, ensuring the mixture is well combined and fragrant.
- Add the seared chicken back to the pan along with the cashew paste. Mix well and add about 1/2 cup of water. Bring to a simmer, cover, and cook on low heat for 15-20 minutes, or until the chicken is tender and cooked through.
- Stir in the fresh cream, remaining 1/2 tsp garam masala, and crushed kasuri methi. Add green chilies if using. Cook for another 2-3 minutes without covering.
- Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.
