Step-by-step- Heat ghee or oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add minced garlic, grated ginger, and green chili (if using). Cook for 1-2 minutes until fragrant.
- Stir in ground cumin, ground coriander, turmeric powder, and garam masala. Cook for another minute, stirring constantly, until aromatic.
- Add the chicken pieces to the pot and cook until lightly browned on all sides, about 5-7 minutes. This helps seal in the juices and flavor.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
- Add the mixed vegetables to the soup. If using coconut milk, stir it in now. Continue to simmer for another 5-7 minutes, until the vegetables are tender-crisp.
- Season the soup with salt and freshly ground black pepper to taste. Remove the green chili if you prefer less heat.
- Ladle the hot soup into bowls, garnish generously with fresh cilantro, and serve with lemon wedges on the side for a bright finish.
