Step-by-step- Heat coconut oil in a large pan or kadai over medium heat. Add mustard seeds and let them splutter.
- Add urad dal (if using) and curry leaves, frying until the dal turns light golden.
- Add chopped onion, green chilies, and grated ginger (if using). Sauté until the onions turn translucent.
- Stir in turmeric powder and a pinch of asafoetida (if using). Cook for 30 seconds until fragrant.
- Add the finely shredded cabbage and salt to taste. Mix well, cover, and cook on medium-low heat for 8-10 minutes, stirring occasionally, until the cabbage is tender-crisp. Avoid overcooking to retain its texture.
- Once the cabbage is cooked to your liking, stir in the fresh grated coconut. Cook for another 2-3 minutes, allowing the flavors to meld.
- Serve hot as a delicious side dish with rice, roti, or parathas.
