Brinji Rice

Step-by-step- Heat ghee or oil in a heavy-bottomed pot or pressure cooker over medium heat. Add the whole spices (bay leaves, cardamom, cloves, cinnamon, fennel seeds) and sauté until fragrant, about 30 seconds.
- Add the sliced onions and cook until golden brown, stirring occasionally. This can take 8-10 minutes.
- Stir in the grated ginger, minced garlic, and slit green chilies. Sauté for another 2 minutes until the raw smell disappears.
- Add the chopped mixed vegetables, turmeric powder, red chili powder (if using), and garam masala. Cook for 3-5 minutes, allowing the spices to coat the vegetables.
- Add the soaked and drained Basmati rice to the pot. Gently mix with the vegetables and spices for 2 minutes, ensuring not to break the rice grains.
- Pour in the water or vegetable broth, coconut milk (if using), and salt to taste. Bring the mixture to a boil.
- Reduce heat to low, cover the pot tightly, and let it simmer for 15-20 minutes, or until all the water is absorbed and the rice is cooked through. If using a pressure cooker, cook for 1 whistle on medium heat, then let the pressure release naturally.
- Once cooked, turn off the heat and let the rice rest, covered, for 5-10 minutes. This allows the flavors to meld and the rice to firm up.
- Gently fluff the Brinji Rice with a fork. Stir in the chopped mint and coriander leaves before serving hot.
