Step-by-step- Wash and soak Basmati rice for 30 minutes. Drain and set aside.
- Heat oil or ghee in a large pot. Add whole spices and sauté until fragrant. Add sliced onion and fry until golden brown. Remove half of the fried onions for garnish.
- Add ginger-garlic paste and green chilies to the remaining onions and sauté for a minute. Add chopped tomatoes and cook until soft and oil separates.
- Stir in red chili powder, turmeric, garam masala, and biryani masala. Cook for 1-2 minutes until aromatic.
- Add the mixed vegetables and salt. If using, add yogurt and mix well. Cover and cook on medium heat for 10-12 minutes, or until vegetables are partially cooked (al dente).
- In a separate large pot, bring water to a rolling boil with salt. Add the soaked Basmati rice and cook until 70-80% done. Drain immediately.
- Layer the biryani: Spread half of the partially cooked rice over the vegetable curry. Sprinkle with saffron milk, some fried onions, and fresh mint/coriander. Add the remaining rice on top.
- Drizzle with 1 tbsp ghee, sprinkle the remaining fried onions, and fresh mint/coriander. Cover the pot tightly with a lid or seal with dough.
- Cook on low heat (dum cooking) for 15-20 minutes. Let it rest for 10 minutes before opening.
- Gently fluff the biryani with a fork and serve hot with raita and salad.

Chef’s Corner
- Ensure vegetables are not overcooked before dum cooking, as they will soften further with the rice.
- For an extra rich flavor, use paneer or mushrooms in addition to other vegetables.
- Garnish generously with fried onions, fresh coriander, and mint for an authentic touch.
- Adjust the spice level by varying the amount of green chilies and red chili powder.
