Step-by-step- Heat olive oil or ghee in a large skillet or Dutch oven over medium heat. Add chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add minced garlic and grated ginger to the skillet and cook for another minute until fragrant.
- Stir in ground cumin, coriander, turmeric powder, red chili powder, and garam masala. Cook for 30 seconds, stirring constantly, until aromatic.
- Add the chicken cubes to the skillet and cook until lightly browned on all sides, about 5-7 minutes. The chicken doesn’t need to be cooked through at this stage.
- Pour in the diced tomatoes (undrained) and chicken broth. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the chicken is cooked through.
- Stir in the rinsed and drained black beans. Continue to simmer for another 5 minutes to allow the flavors to meld and the beans to heat through.
