Step-by-step- Heat vegetable oil in a heavy-bottomed pan or pot over medium heat. Add mustard seeds and let them splutter.
- Add chopped onion, minced garlic, and grated ginger. Sauté for 5-7 minutes until the onions are translucent and fragrant.
- Stir in the diced apples, brown sugar, apple cider vinegar, raisins, red chili powder, ground cumin, ground coriander, and salt.
- Bring the mixture to a gentle simmer, then reduce the heat to low. Cook, stirring occasionally, for 25-30 minutes, or until the apples are tender and the chutney has thickened to your desired consistency.
- Remove from heat and let the apple chutney cool completely. It will thicken further as it cools. Serve immediately or store for later.
