Method

Step-by-step
  1. Clean and pat dry the chicken pieces; marinate with salt, turmeric powder, and lemon juice for 15 minutes.
  2. Heat oil in a large pan or kadai over medium heat; add curry leaves and green chilies, sauté for a minute.
  3. Add chopped onions and cook until they turn golden brown, about 8-10 minutes.
  4. Stir in ginger-garlic paste and sauté until the raw smell disappears, about 2-3 minutes.
  5. Add red chili powder, coriander powder, cumin powder, and garam masala; cook for 1-2 minutes until fragrant, adding a splash of water if spices stick.
  6. Add the marinated chicken pieces to the pan and mix well to coat with the spice mixture.
  7. Cover the pan and cook on medium-low heat for 15-20 minutes, stirring occasionally, until chicken releases its juices and is half-cooked.
  8. Remove the lid, increase heat to medium-high, and cook, stirring frequently, until all the moisture evaporates and the chicken is well-fried and browned.
  9. Sprinkle black pepper powder and adjust salt if needed; cook for another 2-3 minutes.
  10. Garnish with fresh coriander leaves and serve hot with rice or roti.

Storage & Freezer Guide

Make it last
Refrigerator 3-4 days

Store cooled Andhra Chicken Fry in an airtight container in the refrigerator.

Freezer Up to 2 months

Freeze portions in freezer-safe bags or containers once completely cooled. Thaw overnight in the fridge before reheating.

Reheat Stovetop/Microwave

Reheat on the stovetop over medium heat until warmed through, adding a splash of water if it seems too dry. Microwave in short bursts, stirring occasionally.

Chef’s Corner

  • For extra crispiness, ensure all moisture evaporates during the final frying stage. You can also shallow fry in batches if preferred.
  • Adjust the amount of green chilies and red chili powder to control the spice level; Andhra cuisine is known for its heat!
  • Marinating the chicken for at least 30 minutes (or even overnight) enhances flavor and tenderness.
