  2. In a small pan, heat 1/2 tbsp oil. Add cumin seeds and mustard seeds. Once they splutter, add asafoetida and curry leaves. Sauté for a few seconds until fragrant. Let it cool slightly.
  3. In a blender or food processor, combine the chopped Amla, green chilies, ginger, coriander leaves, mint leaves (if using), turmeric powder, red chili powder (if using), jaggery/sugar, and salt.
  4. Add the cooled tempered spices from step 2 to the blender. Add 2-3 tablespoons of water, if needed, to help with grinding.
  5. Grind all ingredients into a coarse or smooth paste, depending on your preference. Avoid adding too much water; the chutney should be thick.
  6. Taste and adjust salt, sweetness, or spice levels as needed. If too tart, add a little more jaggery/sugar.
  7. Transfer the Amla Chutney to a clean, dry air-tight container. Serve fresh with your favorite Indian meals.
