Air Fryer Baingan Bharta

Step-by-step- Wash and pat dry the eggplant. Pierce it several times with a fork or knife. Lightly brush or spray with 1 tablespoon of oil.
- Preheat your air fryer to 375°F (190°C). Place the eggplant in the air fryer basket and cook for 25-30 minutes, flipping halfway, until it’s very soft and the skin is charred.
- Once cooked, carefully remove the eggplant and let it cool slightly. Peel off the skin and mash the flesh with a fork. Discard the stem.
- While the eggplant cools, heat the remaining 1 tablespoon of oil in a large pan or kadai over medium heat. Add the chopped onion and sauté until golden brown, about 7-8 minutes.
- Add the minced ginger, garlic, and green chilies. Sauté for another 2 minutes until fragrant.
- Stir in the chopped tomatoes and cook until they soften and release their juices, about 5-7 minutes.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Cook for 2-3 minutes, stirring constantly, until the raw smell of spices disappears and the oil starts to separate.
- Add the mashed eggplant to the pan. Mix well, ensuring the eggplant is thoroughly coated with the masala. If using, add frozen peas now.
- Cover and simmer for 5-7 minutes, allowing the flavors to meld.
- Stir in the garam masala and half of the fresh cilantro. Mix well.
- Garnish with the remaining fresh cilantro and serve hot with roti, naan, or rice.

- For an extra smoky flavor, you can finish the roasted eggplant directly over an open flame for a few seconds after air frying, or add a pinch of smoked paprika to the masala.
- Don’t overcrowd the air fryer with the eggplant. If you have a smaller air fryer, cook it in batches to ensure even cooking and charring.
- Adjust the amount of green chilies and red chili powder to suit your spice preference.
- If you prefer a smoother texture, you can lightly blend the cooked masala base before adding the mashed eggplant.
